Wholly Frijoles is a family owned restaurant by the Villegas Family. Chef J. Carmen Villegas and his wife first opened their doors in September 11, 2000 with a desire to offer food made with traditional Mexican ingredients, but with a gourmet twist.
Chef Villegas has 17 years of experience with Lettuce Entertain U where he began his career at the Pump Room in downtown Chicago. He later helped open and manage several Lettuce Entertain U restaurants including Jim McMahon's, Maggiano's, and Papagus.
He continued his career at Season's of Long Grove, where he was Head Chef and was able to create the menu and bring to life many of his own recipies.
